Potatoes- I used Maris Piper potatoes because it comes out fluffy and creamy. You can use any type of potato. Other good ones are Yukon Gold, King Edwards, Red Potatoes, and Desiree. You can also use baby potatoes.
Butter- use good quality butter as the taste of the butter will also tell on the potatoes.
Parsley- A little fresh parsley leaves go a long way in enhancing the flavor of the potatoes.
Salt- To taste
Black pepper- To taste
How To Make Butter Potatoes
First, wash the potatoes till they are clean.
If you prefer to peel the potatoes, use a potato peeler to peel the skin.
Cut the potatoes into about 3-4cm size.
If you have the time, soak the potatoes in cold water for 30 minutes. If not, move on to the next step.
Add the potatoes into a pot, and add water to the pot to cover the potatoes by at least an inch.
Pour salt into the water (the water should taste slightly salty so the potatoes are not bland).
Cover the pot and place it on the stovetop on high heat, and when it starts boiling, reduce to medium heat and boil potatoes till they are fork tender (this takes about 10- 15 minutes).
Drain the potatoes and immediately add butter to them.
To drain the potatoes properly, you can use a colander and then add the potatoes back to the pot immediately then add butter.
Add black pepper and parsley. Toss till all is well combined.
Serve and enjoy.
Variation
Brown butter potatoes- To make brown butter potatoes, use brown butter instead of regular butter. To make brown butter, add butter to a pan on medium heat, then stir until the butter forms brown specks at the bottom of the pan and it's brown colored. It is nutty and aromatic and adds the flavor to the potatoes.
Garlic butter potatoes- Use garlic butter instead of ordinary butter. Garlic butter is a combination of garlic and butter as the name implies. Here is a great garlic butter sauce recipe.
Lemon butter potatoes- To make this, you will need to add lemon to the butter. melt the butter in a pan or in the microwave, then add lemon to it. Mix to combine and you have lemon butter for your potatoes. If you like tangy, you will love lemon butter potatoes.
Herb butter- Toos the potatoes with butter and herbs like rosemary, thyme, and parsley and you have herb butter potatoes.
