Before i got to this level of making crispy and fluffy potatoes, I have made many disapointing ones. Haven't we all been there? In pursuit of the perfect roast potatoes recipe! It took time developing, testing and retesting recipes but i eventually nailed the perfect roast potatoes recipe! so, if that's what you are looking for, you're in the right place.

    This pressure cooker roast potatoes recipe is fool proof, easy and made in the instant pot but you can also make it on the stovetop.

    Ingredients for roasted potatoes

    For this recipe, you will need:

    Potatoes: See notes in the frequently asked questions on the best type of potatoes to use for roast potatoes.

    Olive oil- You can substitute with duck fat.

    Salt : Unless you are on a no salt diet, you would need to add salt to taste.

    How to make roast potatoes in instant pot

    For this recipe, you can either use the instant pot from start to finish or you can start with instant pot and roast in the oven. I have included steps for both methods.

    Peel potatoes and cut up in chunks of about 1.5 inches each. Rinse potatoes and add to the inner pot of the instant pot.
    Add enough water to just barely cover the potatoes and add salt to the potatoes.

    Cover instant pot and set to manual high pressure for 3 minutes then quick release.
    Drain potatoes in colander then give them a shake to scuff up the potatoes. Leave the potatoes to dry out for few minutes (this is to get crispy skin).

    Step 3: roast in Instant pot
    Turn on sautee function of the instant pot and add 4 tablespoon olive oil or duck fat in the inner pot of instant pot. Arrange potatoes in a single layer and brown (turn every few minutes till crispy and golden all over).

    Step 3: roast in the oven
    Add olive oil or duck fat in baking tray then arrange the potatoes in single layer. Drizzle potatoes with olive oil and roast in the oven at 220C for 20 minutes or till crispy and golden brown. Turn every 10 minutes in order to crisp all sides.

    Sprinkle with black pepper (optional). Serve and enjoy

    • Make sure to give the potatoes a good scuff in the colander
    • Add use fork to the potatoes to create crooks and for extra crispy
    • Make sure the roast potatoes are in single layer and not on top of each other when roasting.

    Use any fluffy, floury potatoes like maris piper, King Edward potatoes if you are in UK. If in US Yukon golds, russet potatoes are substitute.

    Goose fat, duck fat, olive oil are all good for roasting potatoes. Olive oil is the healthier option.

    Leave to cool completely before putting in airtight container or freezer bags and store in the fridge. It will keep fresh in the fridge for 3- 4 days. You can also store in the freezer. It will last up to 3 months in the freezer.
