For this recipe, you will need:

Olive oil- You can substitute with duck fat.
Salt : Unless you are on a no salt diet, you would need to add salt to taste.

How to make roast potatoes in instant pot
For this recipe, you can either use the instant pot from start to finish or you can start with instant pot and roast in the oven. I have included steps for both methods.
Peel potatoes and cut up in chunks of about 1.5 inches each. Rinse potatoes and add to the inner pot of the instant pot.
Add enough water to just barely cover the potatoes and add salt to the potatoes.
Cover instant pot and set to manual high pressure for 3 minutes then quick release.
Drain potatoes in colander then give them a shake to scuff up the potatoes. Leave the potatoes to dry out for few minutes (this is to get crispy skin).
Step 3: roast in Instant pot
Turn on sautee function of the instant pot and add 4 tablespoon olive oil or duck fat in the inner pot of instant pot. Arrange potatoes in a single layer and brown (turn every few minutes till crispy and golden all over).

Add olive oil or duck fat in baking tray then arrange the potatoes in single layer. Drizzle potatoes with olive oil and roast in the oven at 220C for 20 minutes or till crispy and golden brown. Turn every 10 minutes in order to crisp all sides.
Sprinkle with black pepper (optional). Serve and enjoy
