We love air fryer diced potatoes! It's flavorful, tasty and unlike my crispy air fryer roast potatoes, this recipe does not require parboiling the potatoes as they are cut into cubed bite sizes. If you don't have access to a stove to parboil and still want to eat golden brown, crispy air fryer potatoes, this is the best recipe for you.

This easy diced air fryer potatoes recipe is similar to my Parmentier potatoes recipe but unlike that one, this does not require peeling the skin off the potatoes. You get the health benefits of the skin as long as you wash them well.

It's tasty on its own, can be eaten hot or cold but best served warm.

No peeling the skin required and no parboiling needed which makes it stress free.

It's healthy, makes use of low oil, flavorful and tasty. What's not to love? Let me show you how to make it.

    How to Air Fry Potatoes

Wash the potatoes, pat them dry with a kitchen towel, and dice them into cubes. You can peel the potatoes if you prefer.

Cubed diced potatoes in a bowl.

Add the potatoes into a bowl, add paprika, parsley, rosemary, garlic, pepper, salt, and olive oil. Mix so the potatoes are evenly coated with the seasoning.

    seasoning added into the bowl.

Spray the air fryer basket with cooking spray to prevent the potato from sticking to the basket.

Spread the seasoned cubed potatoes in the air fryer basket in a single layer. Don't overcrowd the basket.

Seasoned potatoes spread in the air fryer basket.

Air fry the potatoes at a temperature of 180C/360F for 10 minutes. Bring out the basket and shake (this ensures that all sides are crispy and cook evenly).

Return basket to the AF and cook for another 10-15 minutes or until crispy, golden brown, and the inside tender.

Cooked dish in the air fryer basket.

When they are cooked and crispy, bring them out and serve with sides of choice.

    Air Fryer Frozen Potatoes

If using diced frozen potatoes, spread in a single layer in the AF basket, and don't forget to shake halfway through cooking. When cooked at a temperature of 180C/360F, frozen will take about 15 - 20 minutes to cook depending on the size. It's ready when the skin is crispy and golden and the inside fluffy.

Note that cooking time might vary with the type and brand of the air fryer used.

    Served and garnished with parsley.

    What to Serve with

These air fryer potatoes are versatile and can be served with anything. Some of the foods you can serve with are :

Instant pot steak , and roasted carrots

Air fryer steak, garlic butter sauce, and Mediterranean vegetables

Roast Leg of lamb, and air fryer eggplant

Air fryer fish, and instant pot carrots

    Lime Chicken, and sauteed vegetables.

Dips - Ketchup, ranch or bbq sauce.

    How to Store

Leave the air fried potatoes to cool completely, put them in a sealed container and you can then store it in the fridge for up to 4 days or in the freezer for up to 4 months. It can be reheated in the oven, microwave, or air fryer.

Reheating in the microwave: Pour in a microwave-safe plate and heat on high settings starting with 2 minutes and increasing by 30 seconds at a time if need be.

Reheating in the air fryer: Spread the potatoes in the AF basket and heat at a temperature of 180C for 3 minutes or until warmed through and crispy.

You can use leftover in Fritattas, breakfast casserole, soups and stews.

    Tips

    • Use Starchy potatoes like Maris Piper, King Edwards, Red potatoes. These are good for roasting, fluffy inside, and crispy skin when cooked right.
    • Cutting the cubed potatoes into 2.5cm bite size makes it cook faster than bigger size. If you were to cut bigger, you might have to adjust the cooking time.
    • Substitute dried herbs for fresh ones.
    • Use Italian seasoning if you have or use any other seasoning of your choice.
    • Don't overcrowd the AF basket as if you do, the potatoes will cook unevenly. Spread the cubed diced potatoes in a single layer and don't pile.
    • If you have the time, soak potatoes for half an hour to cut down on cooking time.
    • Don't cook at too high temperature as this will make the outside skin burn without the inside cooked. It's best to cook at a lower temperature for longer.
    • You can add parmesan, or any toppings of your choice to the potatoes when it comes out of the AF.
    • Cooking time can vary with brands of air fryers therefore you might have to adjust the timing I have recommended.

Why do you soak potatoes in water before air frying?

This is not necessary but soaking potatoes can reduce the cooking time and makes potatoes crispier. It is usually done with fries to reduce starch and prevent them from sticking together.

    Are air fryer potatoes healthy?

Yes they are and they make use of little oil thereby cuts calories by 70 percent than deep frying.
