Pepper– Black pepper or Cayenne pepper. I like to use black pepper.
Oil – I use olive oil however you can use sunflower or vegetable oil.

First peel the carrots (If not peeling, scrub with a sponge to remove any dirt).
Cut the carrots diagonally into equal (about 2 inches) size.
Note you don’t have to cut if making whole roasted carrots but roasting time will slightly be more than stated in this post.
Add the black pepper, parsley, salt and olive then mix.
Arrange the seasoned carrots on a baking paper covered oven tray.
Put the tray in the oven and bake carrots at a temperature of 200C/ 400C for 20 minutes.

Garlic Butter Roasted Carrots – Mix garlic and butter together, add half to the carrots before roasting in the oven and add the remaining half to it as soon as it comes out of the oven.
Brown sugar Carrots – Add brown sugar to the carrots at the time you add the other ingredients. The outcome is sweet, sticky brown sugar glazed carrots.
