Easy Air fryer roast potatoes recipe! Crispy skin, fluffy inside, and delicious. They make a perfect side dish at Thanksgiving dinner, Christmas, or Sunday roast dinners. Let me show you how to roast potatoes in the air fryer.
This is my new favorite method of roasting potatoes. The potatoes come out perfectly crisps, make use of little oil and it's healthier and has fewer calories than oven roasted potatoes or instant pot roast potatoes.
This is the best air fryer roast potatoes recipe in that it makes use of few ingredients, the cooking steps are simple and straightforward and the potatoes come out fluffy inside with crunchy outer without using duck fat or adding flour to the potatoes which makes it vegetarian and vegan friendly.

Air Fryer Roast Potatoes Recipe
For this recipe, I made use of cooking spray but you can use olive or vegetable oil if you don't have cooking spray.
The air fried potatoes in this post were made with Maries piper potatoes but you can use any other type of floury potatoes.
I also used my Probreeze XL 5.5l air fryer which fits more than 1kg of potatoes at a time and also takes 25 mins to roast potatoes in air fryer at a temperature of 190C. Power Xl, Probreeze, and Cosori are some of the brands I recommend.
Aside the air fryer, some other tools you'll need to make this recipe are
Ingredients
Potatoes - I made these with Maris piper potatoes, you can use King Edwards, yukon gold, russets, red potatoes.
Salt
Cooking spray or Oil
Flour – All purpose flour (optional)

You can coat the roast potatoes in garlic herb butter for more flavor and aroma. Ingredients for garlic butter are
Parsley
Garlic
Butter
Black pepper
How to Roast Potatoes in Air Fryer
First, peel the potatoes, cut into similar size and rinse.
Add the potatoes in a pot and cover with water 2 inches above the potatoes.
Add salt, cover the pot and boil for 8-15 minutes depending on the size. Don't boil it too soft.
Drain in a colander and shake the colander to roughen and create scuff on the potatoes then leave for 5 - 10 minutes to cool.
Add the scuffed potatoes in the air fryer basket, spray with cooking spray then air fry at a temperature of 190C for 20- 25 minutes. Shake at every 10 minutes intervals and spray with cooking spray to make sure all sides are golden brown and crisp.
When done, switch off the air fryer and bring out the roasted potatoes.
Serve with any other sides of choice
For Air fryer Garlic herb roast potatoes - Make garlic herb butter by mixing the butter, parsley, garlic, and black pepper then put in the fridge to chill.
Add the herb butter on the potatoes 5 minutes before bringing out of the air fryer.
Serving Suggestion
It can be served with various side dishes such as
Yorkshire pudding
Gravy
Scrambled eggs
How to Store
Put in airtight bowl or ziploc bag and store in the fridge where it will last up to 3 days or in the freezer where it will last up to 3 months. You can reheat from frozen in the oven or air fryer.
To reheat in the air fryer, arrange in the basket and air fry at a temperature of 180C for 5 minutes or until it’s heated through and crispy.
If reheating in the oven, put arrange on an oven tray and bake at a temperature of 350F for 5 minutes or till heated through.
Tips for Air Fryer Roast Potatoes
- You can add 2 tablespoons of Semolina flour or cornmeal to the potatoes after scuffing for crunchiness.
- Boil potatoes before roasting for a fluffy, crispy result.
- To check if the potatoes are parboiled, Insert a fork to check.
