This instant pot steamed carrots recipe is simple and quick. Carrots remain one of my favourite vegetables. It is especially a go-to side dish in my household.
It's naturally sweet without the need for additional sweetener, it's healthy, quick to cook and inexpensive.
My kids absolutely love instant pot steamed carrots over most other vegetable sides and my hubby also loves eating it with steak or chicken as part of his diet regime as he finds it quite filling. Another of our favourite vegetable side dish is this sauteed vegetables.

INSTANT POT CARROTS RECIPE
For this carrots recipe you can use whole carrots or baby carrots and you only need just 2 main ingredients with a choice of additional ingredients.

INGREDIENTS
Carrots - Baby carrots or whole carrots.
Water or broth
Butter - Optional
Salt - Optional
Black pepper - Optional
HOW TO COOK CARROTS IN INSTANT POT PRESSURE COOKER
Wash and slice off the ends of the carrots. Cut the carrots into small chunks around 2-inch size.
You can use potato peeler to scrape off the skin of the carrots if you wish but I do not as I like to retain all nutrients.
Add water in the instant pot and put steamer basket or trivet in the pot.
Put the diced carrots in the steamer basket or trivet then close the instant pot with its lid. Turn the valve into sealing position.
Set instant pot to manual pressure cook high 2 minutes. After the 2 minutes pressure cooking, do a quick release.
Take out carrots and pour in a bowl. If using butter, add on the carrots immediately so it melts into it.
Sprinkle with black pepper and salt (optional)
Serve, garnish and enjoy with sides of choice.
FREQUENTLY ASKED QUESTIONS
Can I steam carrots in instant pot without steamer or trivet?
Yes, you can cook carrots directly in the pot. I personally prefer to steam in steamer basket or place on a trivet so they are not directly in the water. If you prefer not to use steamer or trivet, put carrots in the pot and follow the recipe with the same cooking time.
How long does it take to steam carrots in the instant pot
This depends on how thick cut the carrots are. For the size I have specified within this post, I pressure cook for just 2 minutes. If you'll like it more tender, you can do 3 minutes. Adjust cooking time for chunkier or smaller carrots.

HOW TO STORE LEFTOVER
Leave leftover carrots to cool completely, put in an airtight container or ziplock bag, label and store in the fridge or freezer. They can last in the fridge for up to 4 days and in the freezer for up to 6 months. When needed, reheat in microwave or stovetop.
