    Instant pot shrimp! This pressure cooker shrimp recipe is delicious, easy, quick and can be made with fresh or frozen shrimps. Serve on rice for perfect weeknight dinner.

    Shrimp is one of my favourite seafood and i use it a lot in my cooking. It's delicious, quick to cook, high in protein and healthy. What's not to love? This is one of my favourite seafood dinner and you'll be surprised at how easy it is to make. If you are looking for something you can quickly rustle up without compromising on taste, this is it! It's my go to quick meal. It is low carb and can be made keto diet compliant.

    INSTANT POT SHRIMP RECIPE

    Not only is this recipe quick, it is filling, delicious and healthy. There are many ways of cooking shrimp and this instant pot shrimp is one of my favourite seafood dinner. It takes just 0 minute pressure cook time. Yes you read that right. 0! The shrimp simply cook in the time it takes the instant pot to come to pressure. I like making this recipe in the instant pot because the shrimp comes out with perfect texture and taste delicious, It's quick and convenient cooking shrimp in the instant pot, great taste without the restaurant price tag.

    You can use fresh or frozen shrimp for this recipe, just follow directions detailed below. This recipe is based on using the instant pot pressure cooker however you can use any brand of electric pressure cooker. Below i have summarised the ingredients for this pressure cooker shrimp, how to cook, what to serve with, tips and how to store. Do read these important notes before getting the detailed ingredient list and directions in the printable recipe card at the end of this post. 

    DO YOU HAVE TO THAW FROZEN RAW SHRIMP BEFORE COOKING

    Not for this recipe. You don't need to thaw shrimp however i like to rinse the ice off the shrimp before cooking.

    INGREDIENTS

    Shrimp - Raw, deveined fresh or frozen shrimps. It's best to use Jumbo size shrimps.

    Onion

    Garlic

    Ginger

    Bell pepper

    Cayenne pepper or black pepper

    Dark Soy sauce

    Oil - Sesame or vegetable oil or olive oil. I like to use sesame oil for chinese sauce taste.

    Brown Sugar

    Vegetables - This is optional. Some vegetables i like to include are carrots or broccoli.

    Broth or Water

    Cornflour- Mixed with water to form cornflour slurry. This is to thicken the sauce.

    Salt - to taste

    HOW TO COOK SHRIMP IN INSTANT POT

    If using frozen shrimp, rinse in water to remove the ice glaze.

    Add shrimp in the instant pot then add in onions, garlic, ginger, bell peppers and all other ingredients except cornflour.

    Cover instant pot with it's lid and set vent into sealing position. Set instant pot to manual pressure cook high for 0 minute. After this time, do a quick pressure release. 

    Once instant pot is depressurised, open the lid. Set instant pot to saute mode then add cornflour slurry into the pot.

    Stir till sauce thickens (this takes about a minute or two) then switch off instant pot.

    Delicious instant pot seafood dinner is ready.

    WHAT TO SERVE SHRIMP WITH

    Serve on instant pot white rice, Instant pot jasmine rice or Instant pot basmati rice.

    You can garnish with sesame seeds as pictured below.

    CAN I USE PRAWN FOR THIS RECIPE

    Yes. Use prawn as substitute for shrimp and follow the instructions detailed in this recipe.

    HOW TO STORE

    Leave to cool completely, put in airtight container or freezer bags, label and store in the fridge for up to 4 days or in the freezer for up to 6 months. To reheat, thaw overnight in the fridge and microwave.

    Equipment

    • Instant pot pressure cooker

    Ingredients

    • 500g (1lb) Shrimp fresh or frozen deveined
    • 1 Onion chopped
    • 2 cloves Garlic minced
    • 1 tablespoon Ginger minced
    • 1 Bell pepper chopped
    • 1- 2 large Carrot (optional) sliced atleast ½" thick
    • 2 tablespoon Soy Sauce
    • 1 teaspoon Brown sugar
    • 1 cup Broth or water
    • Salt to taste
    • 2 tablespoon Cornflour mix with 2 tablespoon water to make slurry
    • 1 tablespoon Oil sesame, olive, vegetable or coconut oil
    • 1 teaspoon Cayenne pepper or black pepper

    Instructions

    • If using frozen shrimp, rinse under water to remove ice glaze from it.
    • Add shrimp in the instant pot then add in onions, garlic, ginger, bell peppers and all other ingredients except cornflour.
    • Cover instant pot with it's lid and set vent into sealing position. Set instant pot to manual pressure cook high for 0 minute. After this time, do a quick pressure release. 
    • Once instant pot is depressurised, open the lid.
    • Set instant pot to saute mode then add cornflour slurry into the pot. Stir till sauce thickens (this takes about a minute or two) then switch off instant pot.
    • Serve and enjoy.

    Notes

    If using water instead of broth, dissolve 1 small stock cube in the water.
    Serve on rice or pasta for delicious dinner.
