Ingredients
Chicken - I have used skin on, bone in chicken thighs here but you can use skinless boneless chicken thighs or chicken breasts. This recipe also works with chicken legs however the cooking time will vary slightly.
Lime juice - Fresh juice works best for this.
Lime zest
Garlic
Honey or Sugar
Worcestershire sauce - Substitute with Soy sauce.
Coriander
Pepper - Black pepper, Cayenne pepper, chili powder, or pepper flakes works fine.
Salt
Olive oil
How to Make Lime Chicken
Prepare the Chicken - Pat chicken dry with kitchen/paper towel.
Make the lime marinade - Mix garlic, pepper, salt, Worcestershire sauce, lime juice, lime zest, and sugar. Stir till well combined.
Marinate Chicken - Add the lime marinade to the chicken in a bowl and mix till well combined. Cover the bowl and leave to marinate for 60 minutes.
Bake - Preheat the oven at 200C/400F.
Arrange the marinated chicken on a baking tray, cover the tray with foil, and put the tray in the middle of the oven. Grill in the oven at a temperature of 200C for 35 minutes. In the last 5 minutes, uncover the chicken so the top browns.
Bring out of the oven, and serve.
