Parmentier potatoes is one of the many ways we enjoying making potato side dish. It is flavorful, aromatic, and delicious. It's so good that you don't need gravy or sauce to enjoy them.
They are vegan, vegetarian, and gluten free.
What is Parmentier Potatoes
Parmentier potatoes are cubed potatoes that are parboiled, seasoned, and roasted until they are crispy and golden brown. They are like mini roast potatoes that are seasoned with garlic and herb.
They originated in France and are named after a French Chemist Antoine Augustin Parmentier who was known for promoting spud as healthy food. He attributed his good health in prison to his spud diet and promoted it in France and Europe upon his release from prison.
They are tasty side dish that goes with vegetables, sauces and protein like chicken, beef, fish, lamb, and pork.
Parmentier Potatoes Recipe
Parmentier potatoes are the perfect side dish, be it for Easter meal, Sunday roast, Thanksgiving, Christmas, or any dinner party.
They are tender and fluffy on the inside and crispy on the outside.
These crispy cubed potatoes are easy, quick, and simple to make. Tastier than traditional roasted potatoes and cook faster because of its small sizes.
You can make ahead and reheat these herby diced potatoes and i have included in this post instructions on how to do this.
Let me show you how to make Parmentier potatoes from scratch.
TOOLS YOU'LL NEED FOR THIS RECIPE
Potato peeler - To peel the skin off.
Pot - To parboil the potatoes.
Colander - To drain water.
Baking tray - To roast the potatoes.
Ingredients

Potatoes - Potatoes perfect for roasting such as Maris pipers, Yukon gold, King Edwards.
Garlic powder - You can substitute with garlic granules but avoid using fresh garlic for this recipe.
Rosemary - Substitute with thyme or any herb of choice.
Parsley
Oil - olive oil, rapeseed oil, vegetable oil, sunflower oil, or any flavorless oil works fine.
Black pepper - Substitute with cayenne pepper
Salt
How to Make Parmentier Potatoes (Cubed Potatoes)
Preheat oven at a temperature of 200C/400F
Wash the potatoes thoroughly, peel and dice the potatoes into cubes of about 2.5cm in size.
Add the diced potatoes into a pot, add boiling water to cover at least one inch above the potatoes then boil for 5 minutes.
Do not parboil for too long
When it's parboiled, drain the potatoes in a colander and leave in the colander or the pot to cool.
Don't shake or scuff as you don't want them to lose the cubed shape
When cooled, add rosemary, parsley, garlic, pepper, and half of the olive oil. Mix so the potatoes are covered in the ingredients above.
I like to add some oil to help the seasoning stick.
Add the remaining olive oil in a baking tray and spread it evenly on the tray.
Arrange the parboiled cubed potatoes in a single layer on the baking tray. Return the tray to the oven and bake at a temperature of 200C for 10 minutes.
Turn the potatoes and bake for another 10 minutes or until crispy and golden brown.
Bring out of the oven, serve and enjoy.

How to Store and Reheat Cubed Potatoes
When it's completely cool, put it in an airtight container then store it in the fridge where it will store well for up to 4 days or in the freezer for up to 3 months. You can reheat in the oven, microwave or air fryer,
To reheat in the oven: Preheat oven to 190C/390F. Spread the potatoes on a parchment paper-lined baking tray and put in the oven to bake for 5 minutes or until heated through.
To reheat in the air fryer: Arrange the Parmentier potatoes in the air fryer basket and air fry at a temperature of 180C for 5 minutes or until heated through and crispy.
To reheat in the microwave: To reheat in the microwave, put in microwave-safe plate and heat on high starting with 2 minutes and increasing the time if need be.
Tips for Making Parmentier Diced Potatoes
- You can make them in the air fryer for low oil option.
- Use good quality potatoes. Starchy potatoes are good for roasting.
- Substitute the dried herbs for fresh.
- Parboiling saves time as it makes the Parmentier roast quicker however you can roast without parboiling.
- Don't parboil for too long as this will make the potatoes overcook and lose shape.
- Leave out the garlic if you don't use garlic in cooking or substitute it with onion powder.
- Adjust black pepper to taste.
- You can add other herbs like sage, thyme, or use Italian seasoning.
- Don't pile the cubed potatoes on top of another. Arrange in one layer for the best outcome.
- You can use canned potatoes for this recipe.
- Top the roasted cubed potatoes with black pepper, parmesan, or any sauce of your choice.
- You can use it in other dishes like breakfast casserole.
