    Cooking diced potatoes in the oven is not only easy, and quick, but it is also mess-free and requires only minimal preparation. I make this baked diced potatoes recipe a lot as it's delicious and perfect as snacks, appetizers, and as a side dish.

    No parboiling is needed for this oven cubed potatoes. Just chop potatoes, season them, and roast them in the oven to crispy perfection but if you want a recipe that parboils the potatoes, check these Parmienter potatoes and roast potatoes.

    This recipe has been tested and tried many times and it works all the time to produce crispy diced potatoes that have a crunchy exterior with tender inside.

    Only a few ingredients are used in making this recipe- the seasoning, potatoes, and oil. These are inexpensive ingredients that are readily accessible in most grocery stores or you probably have them in your pantry already.

    This is a versatile chopped potatoes side dish that is perfect for the holidays and all occasions. It goes with proteins like herb roasted chicken, turkey, steak, and lamb.

    Potatoes- Use any good potatoes. Some that I have used with this recipe with great results are Maris Piper, King Edwards, White potatoes, and Red potatoes. Russet and Yukon Gold are good choices.
    Herbs- I used rosemary and parsley. You can add any other herb you like with potatoes.
    Garlic - Garlic granules but it can be substituted for garlic powder.

    Onion granules
    Black pepper- This can be substituted for white pepper or Cayenne.

    Paprika- I like to add this for color.
    Self raising Flour- This is optional. Leave it out for gluten-free potatoes.
    Salt
    Olive oil

    How To Make Diced Potatoes In The Oven

    Here are the step-by-step instructions on making crispy diced potatoes in oven:

    Preheat the oven to 200C/400F.

    Cut the potatoes into ½-inch cubes.

    Add the potatoes to a bowl, rinse, and pat dry with kitchen towels.

    Add oil, parsley, rosemary, garlic granules, onion granules, paprika, self-raising flour, salt and black pepper.

    Toss till the potatoes are well coated in the seasoning.

    Transfer the potatoes to a baking tray.

    How Long To Cook Diced Potatoes In The Oven

    Depending on the size, how long to cook diced potatoes in the oven is 20-25 minutes at 220C/425F.

    How long to bake it at 200C/400F is about 25-30 minutes.

    They are cooked when tender inside, and crispy outer. They are best served hot.

    Helpful Tips

    • Floury potatoes work best for this recipe, however, you can use other types. I've tried red potatoes, King Edwards, baking potatoes, and others with good results.
    • Peeling the potatoes is optional. You can leave the skin on if you prefer but wash them thoroughly.
    • Dice the potatoes into similar-sized cubes so they cook evenly.
    • If you have the time, soak the potatoes in cold water for 30 minutes before seasoning and cooking. This makes the potatoes crispier.
    • Add any other complimenting herbs of your choice to the seasoning.
    • Don't overcrowd the baking tray.
    • Toss the potatoes halfway through cooking for even crisp.
    • It's best served hot.

    Boiling before baking is optional. As the potatoes are cut into small cubes and cook fairly quickly, it is unnecessary to boil them before baking.

    Pack leftovers in an airtight container when cooled, then store them in the fridge for up to 3 days or in the freezer for 3 months.
