Sweet potatoes- I recommend peeling the sweet potatoes for this recipe. If you don’t want to peel them, make sure to scrub the potatoes thoroughly as dirt can easily get stuck in all the little nooks.

Seasonings- Feel free to experiment with the flavors you add to your sweet potatoes, but I love the savory and herbaceous combination of parsley, garlic powder, and onion granules!

Peel and chop the sweet potatoes into bite-size cubes about 1-2 inches in size. You can make them bigger, but the cooking time will vary depending on their size.
Add the diced sweet potato cubes to a large mixing bowl, rinse, and pat them dry with paper towels.
Add olive oil, onion granules, garlic granules, parsley, salt, and pepper. Mix everything together until well combined.
Transfer to the air fryer basket in a single layer, leaving some space between each cube.
Air fry sweet potatoes for 12-15 minutes, shaking a few times throughout cooking, until golden brown and fork-tender.
