This crispy oven baked diced potatoes recipe is simple but perfect and worthy of any dinner table. The chopped and roasted cubed potatoes are tender inside, crispy outer, flavorful, and yummy, and make a great side dish for Christmas, Thanksgiving, Easter, or any occasion.

Add oil, parsley, rosemary, garlic granules, onion granules, self-raising flour, paprika, salt and black pepper.
Toss till the diced potatoes are well coated in the seasoning.
Transfer the potatoes to a baking tray.
Bake cubed potatoes for 20-25 minutes. Toss them halfway through cooking for even crispness.
Take it out of the oven, Serve, and enjoy.

Floury potatoes work best for this recipe, however, you can use other types. I've tried red potatoes, King Edwards, baking potatoes, and others with good results.
Peeling the potatoes is optional. You can leave the skin on if you prefer but wash them thoroughly.
Dice the potatoes into similar-sized cubes so they cook evenly.
If you have the time, soak the potatoes in cold water for 30 minutes before seasoning and cooking. This makes the potatoes crispier.
Add any other complimenting herbs of your choice to the seasoning.
Don't overcrowd the baking tray.
Toss the potatoes halfway through cooking for even crisp.
