    Roasted Baby Potatoes Recipe (Mini Potatoes)

    This roasted baby potatoes recipe is easy and requires minimal preparation with less than 10 minutes of hands-on time. It's simply the best mini potatoes recipe and you will want to add it to the top of your recipe collections.

    Potatoes are versatile and can be served with many foods including meat, other veggies, sauces, dips, etc and that is why it's one of the most popular side dishes ever.

    These baked baby potatoes make use of a few ingredients, it's vegetarian and vegan.

    It is a healthy potato recipe that is seasoned with herbs and spices so not only do you get guilt-free crispy baby potatoes, you get flavorful, tasty ones. 

    The mini potatoes or should I say new potatoes are perfectly roasted with crispy skin, and tender inside.

    They are so quick to make that they can be made all under 35 minutes or they can be made ahead and stored for later use if you prefer.

    I have detailed two methods of making it - roasting without boiling and boiling before roasting a popular method of roasting baby potatoes in the UK.

    Let me show you how to roast baby potatoes in oven in simple steps.

    Ingredients

    Baby potatoes - Use any type of new potatoes including baby red potatoes, Yukon gold.

    Parsley - Fresh parsley is best used however this can be substituted with dried parsley if you don't have the fresh one available.

    Paprika- This is optional but I like adding a little bit of this.

    Rosemary 

    Thyme

    Garlic powder or garlic granules

    Black pepper 

    Salt

    Self raising Flour (Optional)

    How to Roast Baby Potatoes

    Wash the potatoes to get rid of any dirt on them then cut each potato into two.

    I like to slice the potatoes into two or three for the bigger ones so as to attain a similar size for all and also the smaller they are, the crispier.

    Drain the potatoes and add them to a bowl.

    Add the parsley, thyme, paprika, garlic powder, rosemary, black pepper, salt, flour (if using) and oil to the potatoes. Mix till all are well combined.

    Arrange the seasoned potatoes on a baking tray then bake the potatoes at a temperature of 190C for 25 - 30 minutes.

    Take out of the oven when it's cooked tender, fluffy and the skin is golden brown and crispy.

    Boil Baby Potatoes Before Roasting Method

    Boil baby potatoes before roasting? Yes, you can parboil first so as to shorten the time it roasts in the oven. Here's how to do it:

    Cut potatoes into two so they are almost as equal in size as possible.

    Add the potatoes into a pot, add salt, then cover with boiling water. Let it boil for 4 minutes then take it off heat. 

    Drain the water immediately then cool the potatoes for 5 - 10 minutes. 

    Add the paprika, thyme, parsley, rosemary, garlic powder, black pepper, flour, salt, and oil to the potatoes. Mix well then arrange the potatoes on a baking tray then put in the oven. 

    Bake at a temperature of 190C/380F for 15 minutes or till the skin is crispy and golden brown, and inside fluffy, and tender. 

    Serve and enjoy.

    How Long To Roast Baby Potatoes

    How long to roast baby potatoes depends on the temperature you are baking at, if parboiling, and the sizes of the potatoes. Here's a simple guide to the roasting time:

    How long to roast baby potatoes at 375F is between 25-35 minutes.

    For how long to roast baby potatoes at 400F is between 20-25 minutes.

    How long to roast baby potatoes at 350F is 35-45 minutes.

    How long to roast parboiled baby potatoes is between 15-20 minutes.

    What To Serve With

    Lamb

    Steak - Pan fried steak, air fryer steak.

    Fish - Instant pot fish, air fryer haddock

    Vegetables - pan fried vegetables, boiled broccoli, green peas, sautéed vegetables.

    How To Store Roasted Mini Potatoes

    Leftover oven roast baby potatoes can be preserved in the refrigerator. Store it in the fridge or freezer, depending on how long you would like to preserve it.

    To store it in the fridge - Leave the potatoes to cool then put them in an airtight container or Ziploc bag then put the container in the fridge. The mini potatoes will be preserved for up to 5 days in the fridge.

    To store it in the freezer - Let the potatoes cool completely, then put them in an airtight container or freezer bag, label with name and dates before putting it in the freezer where it will last for up to 6 months.

    Reheating baby potatoes - You can reheat it from chilled or frozen in the microwave, oven, or air fryer.

    How to reheat in the microwave, place the potatoes in a microwave-safe bowl then heat on high settings at 30 seconds intervals until they are warmed through.

    To reheat in the oven- Arrange them on a baking tray, put the tray in the oven, and bake at a temperature of 180C for 4 minutes or till warmed through.

    Tips

    • Cut the mini potatoes into 2 to try and get the sizes equal and to roast them faster, and get them crispier.
    • Leave room between the potatoes on the baking pan. Don't overcrowd.
    • Garlic powder or granules works best for this recipe than fresh garlic however the dried herbs can be substituted for fresh herbs as fresh herbs work better for it.
    • You can add Parmesan to serve for a cheesy flavor.
