    Chicken With Bell Peppers and Onions Recipe

    This chicken with bell peppers and onions recipe is easy, quick, and simple to make. It is colorful, smells amazing, and tastes delicious.

    The ingredients used in this recipe are few and basic pantry ingredients that are clean with no artificial flavor. Bell peppers with chicken are inexpensive which makes this a budget-friendly dish.

    Chicken and peppers dish is versatile and you can put your touch on the recipe. Switch up the seasoning for the chicken, dice the peppers, or use a marinade of your choice.

    I like to use boneless skinless chicken breast and red, yellow, and orange bell peppers for this recipe and the result is a colorful dish that is not only delicious but pleasing to the eyes..

    Only minimal cleanup is required to make this peppers with chicken dinner. It's a one-pot dish which means you have fewer dishes to clean up.

    It's quick and in less than 30 minutes you can have it on the dinner table. Perfect for weeknights or any time you want a quick delicious meal.

    Ingredients

    These are the ingredients you will need to make chicken with bell peppers and onions:

    Chicken- I used boneless chicken breast for this post but you can use boneless chicken thighs. If you use any other chicken parts like the legs, you will have to adjust the cooking time and ensure it is cooked through to an internal temperature of at least 165F.

    Bell peppers- Use Red, yellow, and orange peppers as they are sweet, and using the 3 colors will make your dish colorful. I avoid using green bell peppers for this dish because they are slightly bitter however you can use it if you want.

    Red Onions- This is flavorful and colorful. It's the best onion to use for chicken peppers and onions. You can substitute for yellow, brown, or white onions.

    Garlic- Freshly minced garlic or frozen chopped garlic works fine.

    Italian seasoning- This is a mix of herbs including parsley, basil, and oregano. It makes the dish aromatic and delicious.

    Paprika- I like to use smoked Paprika but you can use regular Paprika.

    Black pepper- Freshly ground pepper is preferable. This can be substituted for pepper flakes or cayenne.

    Onion and garlic granules- Can be substituted for onion and garlic powder.

    Salt

    Vinegar or lemon juice

    Oil- Olive oil, sunflower, or vegetable oil.

    How To Make Chicken With Bell Peppers and Onions

    Add the paprika, garlic granules, onion granules, parsley, black pepper, thyme, and salt into a small bowl. Mix till combined.

    Pat the chicken breasts dry and season with half of the seasoning mix.

    Place a skillet on medium heat. Add oil to the skillet and when it's heated, add in the seasoned chicken.

    Cook for 4-5 minutes or till it is browned then gently flip it to brown the other side for another 4-5 minutes.

    Transfer the chicken to a plate and set it aside.

    Add the sliced Onion, minced garlic, bell peppers, and the remaining seasoning into the same skillet used to cook the chicken.

    Stir fry and cook till it's tender and slightly crispy.

    Then transfer the chicken breasts back into the skillet.

    Add ΒΌ cup of chicken stock.

    Cook for 2-3 minutes or until the chicken is cooked through then take it off heat.

    Serve and enjoy.

    VARIATIONS

    Chinese Chicken and Bell peppers- Add Chinese stir-fry sauce to the chicken.  To make Chinese stir fry sauce, combine soy sauce, oyster sauce, brown sugar, Sesame oil, and cornflour.

    Mushrooms- Make it by adding mushrooms to the chicken and peppers.

    How To Serve

    It pairs well with almost anything. Some side dishes you can serve it with are:

    Mashed potatoes with cream cheese, boiled potatoes, butter potatoes, pesto potatoes, boiled sweet potatoes

    Boiled long grain rice, cauliflower rice, Cous Cous, yellow rice, jollof rice, curry rice, rice and peas

    Boiled broccoli, instant pot carrots, roasted carrots, boiled asparagus, boiled zucchini

    No yeast bread, bread rolls

    Boiled pasta, spicy pasta, lemon pasta

    How To Store

    Let the chicken and bell peppers cool completely then transfer it to an airtight container, label and store in the fridge where it will keep for 3-5 days, or store in the freezer where it will last for up to 6 months.

    Reheat it on the stove or in the microwave.

    To reheat it on the stove- Transfer the chicken with peppers to a pan, add a dash of water, and cook on low medium heat till it's heated through.

    To reheat in the microwave- Transfer it to a microwave-safe plate, add a splash of water then microwave at high settings for 1 minute then at 30-second intervals till it's warmed through to how you desire.

    Tips For Making Chicken With Peppers

    • Pat the chicken dry with paper towels before seasoning.
    • Use a mallet to flatten the chicken breasts.
    • You can substitute boneless chicken breast for boneless chicken thighs.
    • Other seasoning that works with this recipe are jerk seasoning, fried chicken seasoning, Italian seasoning.
    • Use both red, orange, and yellow bell peppers for color.
    • Red Onions are best for this recipe but you can use yellow, brown, or any other onion.
    • Cut the onions and bell peppers into similar shapes and sizes.
    • If you prefer, dice or slice the chicken after pan frying before adding it back to the skillet however rest it for at least 5 minutes after pan frying before slicing it.
    • Chicken should be cooked through and the internal temperature at the thickest part should be at least 165F.

    • 1 each Bell peppers (Red, Orange and Yellow)
    • 1 medium Red Onion
    • 2 cloves Garlic minced
    • 2 teaspoons Paprika
    • ΒΌ teaspoon Garlic and onion granules each
    • Β½ teaspoon Parsley

    • Salt to taste
    • 2 tablespoons Olive oil

    Instructions

      Easy to make and delicious. Used a little more chicken broth than it called for because it gave it more of a sauce than dry.
