Ingredients
These are the ingredients you will need to make chicken with bell peppers and onions. The detailed ingredient list, measurements, and directions are in the recipe card at the bottom of the post.
Chicken- I used boneless chicken breast for this post but you can use boneless chicken thighs. If you use any other chicken parts like the legs, you will have to adjust the cooking time and ensure it is cooked through to an internal temperature of at least 165F.
Bell peppers- Use Red, yellow, and orange peppers as they are sweet, and using the 3 colors will make your dish colorful. I avoid using green bell peppers for this dish because they are slightly bitter however you can use it if you want.
Red Onions- This is flavorful and colorful. It's the best onion to use for chicken peppers and onions. You can substitute for yellow, brown, or white onions.
Garlic- Freshly minced garlic or frozen chopped garlic works fine.
Italian seasoning- This is a mix of herbs including parsley, basil, and oregano. It makes the dish aromatic and delicious.
Paprika- I like to use smoked Paprika but you can use regular Paprika.
Black pepper- Freshly ground pepper is preferable. This can be substituted for pepper flakes or cayenne.
Onion and garlic granules- Can be substituted for onion and garlic powder.
Salt
Vinegar or lemon juice
Oil- Olive oil, sunflower, or vegetable oil.
How To Make Chicken With Peppers and Onions
Add the paprika, garlic granules, onion granules, parsley, black pepper, thyme, and salt into a small bowl. Mix till combined.
Pat the chicken breasts dry and season with half of the seasoning mix.
Place a skillet on medium heat. Add oil to the skillet and when it's heated, add in the seasoned chicken.
Cook for 4-5 minutes or till it is browned then gently flip it to brown the other side for another 4-5 minutes.
Transfer the chicken to a plate and set it aside.
Add the sliced Onion, minced garlic, bell peppers, and the remaining seasoning into the same skillet used to cook the chicken.
Stir fry and cook till it's tender and slightly crispy.
Then transfer the chicken breasts back into the skillet.
Add ¼ cup of chicken stock.
Cook for 2-3 minutes or until the chicken is cooked through then take it off heat.
Serve and enjoy.
VARIATIONS
Chinese Chicken and Bell peppers- Add Chinese stir-fry sauce to the chicken. To make Chinese stir fry sauce, combine soy sauce, oyster sauce, brown sugar, Sesame oil, and cornflour.
Mushrooms- Make it by adding mushrooms to the chicken and peppers.

To reheat it on the stove- Transfer the chicken with peppers to a pan, add a dash of water, and cook on low medium heat till it's heated through.
To reheat in the microwave- Transfer it to a microwave-safe plate, add a splash of water then microwave at high settings for 1 minute then at 30-second intervals till it's warmed through to how you desire.
