    My leftover turkey curry with coconut milk is creamy, aromatic, flavorful, and delicious. It is easy and quick to cook and ready in just 15 minutes.

    If you have turkey leftovers from Christmas or Thanksgiving, It's a good thing as you get to make my leftover curry turkey that is flavorful and yummy. This is the recipe I make with my leftovers and it doesn't fail. You will love it and might intentionally start saving your turkey just to make this dish.
    This turkey curry with coconut milk recipe is perfect for making a fresh new meal with your leftover meat from the holidays.

    Leftover Turkey Curry With Coconut Milk You'll Love

    This turkey leftovers curry is not only easy, and quick to make but it is also simple, delicious, and restaurant quality.

    It's easy and quick- As the turkey is already cooked, you cut out the time for cooking it and this dish can be ready in just 15 minutes.

    This leftover turkey curry with coconut milk makes use of a few simple ingredients.
    The coconut milk makes it creamy and just the perfect texture.

    It is versatile and can be served with rice, pasta, naan, potatoes, bread and noodles. A good way of using up air fryer turkey legs, and Roasted turkey.

    This dish is nutritious and delicious.

    Ingredients

    Here are what you will need to make leftover turkey curry:

    Leftover turkey- This can be diced, Shredded, cubed, or stripped.

    Curry powder- I used madras curry powder (Indian curry powder) however you can use the regular curry powder or Jamaican curry. I also have a homemade curry recipe you can use to make yours.

    Onion- Brown, yellow, or white onion works fine. Finely chopped or you can blend it.

    Garlic - Freshly minced or chopped.

    Ginger- Minced ginger or ginger paste works fine.

    Cumin- It adds more kick to the curry. If you don't have this available, leave it out. It is usually in the curry powder already.

    Cayenne pepper- Adjust quantity to how spicy you like the curry. It can be substituted with black pepper.

    Ground coriander

    Tomato paste- This is also called tomato puree.

    Coconut milk- I used light coconut milk but you can use full-fat coconut milk if you prefer.

    Olive oil- This can be substituted for coconut oil.

    Salt

    Coriander leaves- For garnish. This is optional.

    How To Make Leftover Turkey Curry

    Here are the step-by-step instructions on how to make leftover turkey curry with coconut milk:

    Place a pot on medium heat.

    Add oil then add the chopped onions. Cook the onions till soft, fragrant, and translucent (this takes about 2 minutes).

    Add in the garlic and ginger then fry for 30 seconds.

    Add curry powder, cumin, Coriander, pepper, and salt. Stir and toast for a minute.

    Then add the tomato paste. Cook for 2 minutes.

    Pour in the coconut milk, stir, and add the turkey leftovers. Simmer for 5 minutes.

    Garnish with Coriander then take off the heat.

    What To Serve With

    Here are some suggestions of what to serve with coconut turkey curry:

    Long grain rice, basmati rice, Jasmine rice, Pilau rice.
    Pasta, boiled pasta,
    Soft bread, no yeast bread, dinner rolls
    Noodle
    Boiled Potatoes, baked diced potatoes, cream cheese mashed potatoes, onion mashed Potatoes
    Mango chutney

    Helpful Tips

    • If you don't like to see chopped onions in your food, blend the onions instead of Chopping them.
    • If you have leftover roasted vegetables, add them to the curry two minutes before taking it off heat.
    • You can substitute coconut milk with heavy cream.
    • Adjust cayenne pepper to suit your taste.

    Can I make this without coconut milk?
    Yes, if making it without coconut milk, substitute with broth and use cornflour to thicken the curry.

    Can I use leftover chicken instead?

    Yes, the turkey can be substituted for leftover chicken.

    How To Store and Reheat

    Let the curry cool completely then pack it in an airtight container, then store it in the fridge for up to 3 days or in the freezer for up to 3 months.
    Reheat it in the pan on the stove or in the microwave. Add a splash of water or coconut milk to reheat it.

    • 500 g Leftover turkey
    • 1 can (400ml) Coconut milk
    • 2 tablespoon Curry powder
    • 1 medium Onion chopped
    • 3-4 cloves Garlic minced
    • 2 teaspoon Ginger minced
    • ¼ teaspoon Cayenne pepper or to taste
    • 1.5 teaspoon Ground coriander
    • ½ teaspoon Cumin
    • 1 tablespoon Tomato paste
    • Salt to taste
    • 2 tablespoon Olive oil

    Instructions
