This leftover turkey curry with coconut milk is creamy, aromatic, flavorful, and delicious. It is easy and quick to cook and ready in just 15 minutes. Add oil then add the chopped onions. Cook the onions till soft, fragrance and translucent (this takes about 2 minutes).
Add in the garlic and ginger then fry for 30 seconds.Add curry powder, Cumin, Coriander, pepper, and salt. Stir and toast for minute then add the tomato paste. Cook for 2 minutes.
Pour in the coconut milk, stir and add the turkey leftovers. Simmer for 5 -8 minutes.
If the curry is too thick, add a splash of broth or water to get your desired consistency.
Garnish with Coriander then take off the heat.
Serve and enjoy.

Notes
If you don't like to see chopped onions in your food, blend the onions instead of Chopping them.
If you have leftover roasted vegetables, add them to the curry two minutes before taking it off heat.
