Ingredient notes
Boneless chicken thighs or breast- Use either boneless chicken breast or boneless chicken thighs.
Pasta- I used Penne pasta but you can use any other pasta of your choice. Rigatoni, spaghetti, and fusilli are some I've tried with this recipe.
Curry powder - You can use store-bought or homemade. Here's my homemade curry powder recipe. Use Indian, Jamaican or regular curry powder.
Ground Coriander
Cumin
Garlic
Onion- I used brown onion, yellow or white onion works well too.
Ginger
Cayenne pepper- Adjust this to how spicy you want the food. Substitute for black pepper.
Coconut milk- I used full-fat coconut milk in a can. You can use low-fat if that's what you prefer.
Salt- To taste and tie the meal together.

How To Make Chicken Curry Pasta (Step by Step Instructions)
Follow these steps to make chicken curry pasta:
Step 1: Boil the pasta in a large pot until they’re al dente. Reserve ¼ cup pasta water, drain pasta and set aside.
Step 2: Add olive oil to a pan then add chopped onions and saute on medium heat until they’re fragrant and translucent then add garlic and fry for 30 seconds.
Step 3: Add ginger, curry powder, coriander, cumin, cayenne pepper, and salt. Stir to combine and fry for 1 minute to release the aroma.
T Step 4: Add in the cubed chicken, stir, and cook till the outer is no longer pink (2-3 minutes).
Step 5: Pour in the chopped tomatoes and stir.
Step 6: Add in coconut milk. Stir and cook till chicken tender then add in pasta water and cornflour slurry to thicken.
Step 7: Add the cooked pasta and stir to combine. Let it simmer for 1-2 minutes to let the flavors combine.
Step 8: Garnish with chopped coriander leaves and take off heat.

Pasta curry is a main meal and filling on its own. However, it pairs well with some side dishes like cucumber tomato salad, Air fryer vegetables, boiled carrots, baked vegetables, and pan fried vegetables.
