This creamy chicken curry pasta recipe is ready in 20 minutes and perfect for weeknight dinner. It is made with coconut milk, bursting with flavors, comforting and delicious. If you like easy and quick, you will love this curry chicken pasta.

1cupCoconut milk

2tablespoonsCurry powder
1teaspoonCoriander

½teaspoonCayenne Pepper or Black pepperor to taste

1tablespooncornflourmix with 2-3 tablespoons water to make slurry.
Instructions
Boil the pasta in a large pot until they’re al dente. Reserve ⅛ cup pasta water, drain pasta and set aside.
Add olive oil to a pan then add chopped onions and saute on medium heat until they’re fragrant and translucent then add garlic and fry for 30 seconds.
Add ginger, curry powder, coriander, cumin, cayenne pepper, and salt. Stir to combine and fry for 1 minute to release the aroma.
Add in the cubed chicken, stir, and cook till the outer is no longer pink (2-3 minutes).
Pour in the chopped tomatoes and stir.
Add in coconut milk. Stir and cook till the chicken is tender then add pasta water and cornflour slurry to thicken.
Add the cooked pasta and stir to combine. Let it simmer for 1-2 minutes to let the flavors combine.
Garnish with chopped coriander leaves and take off heat.

Cut the chicken into uniform pieces so they all cook evenly. Ensure they are completely cooked before you add the pasta and combine.
