Here are what you'll need to make curried sausages:
Sausage- I use chicken or beef sausages as I don't eat pork but you can use any sausage of your choice. I used chicken for this post.
Curry powder- I used regular curry powder however you can use Indian curry powder or anyone.
Coconut milk - I used full fat however you can use low-fat coconut milk if you prefer. Also, if you don't want to use coconut milk at all, substitute it with broth or water.
Onion - use brown, white, or yellow onion.
Garlic - Freshly minced or chopped garlic works best for this recipe.
Ginger - minced
Cayenne pepper - This can be substituted for black pepper.
Coriander- Dried Coriander or fresh (this is optional and the meal will still taste good with or without it).
Salt
Chicken broth
Cornflour - This can be substituted for self-raising or plain flour.
Carrots - Fresh or frozen works fine.
Peas- Fresh or frozen.
How To Make Curried Sausages
Here are the step-by-step instructions for making curried sausages:
Place a frying pan or skillet on medium heat. Add oil to the pan then arrange the sausages in it. Pan fry sausages for 5 minutes while turning them intermittently to brown the sides evenly.
Transfer the sausages to a plate, let them rest for 5 minutes, and slice them into bite sizes.
Add onions to the frying pan and cook it for 2 minutes or until it's translucent then add in minced garlic. Stir and cook for 1 minute.
Add ginger, curry powder, cayenne pepper, Coriander, and salt. Stir for 1 minute or till the spices release their fragrance.
Pour in coconut milk and chicken broth. Stir and simmer for 2 minutes.
Add the sausages, peas, and carrots. Stir and let it continue to cook for 5 minutes.
Mix cornflour with water to make a cornflour slurry and add it to the curry. Stir and simmer the curry for 2-3 minutes or till it's thickened.
Take off the heat and serve.

Curry sausage is versatile and goes with many foods. In Australia and the UK, it is traditionally served with mashed potatoes. Below are other suggestions of what you can serve it with:

Storage and Reheating
When the sausage curry is completely cooled, pack it in a sealable container then store it in the fridge for up to 3 days or in the freezer for up to 6 months.
To reheat, add the curry to a pot or pan, add a splash of water, and cook on low medium heat till it's heated and thickened to your desired consistency. To reheat it in the microwave, pour it into a microwave-safe bowl, add a few tablespoons of water, and microwave it on high settings for 2 minutes or till heated it's hot.

- 4 cloves Garlic
