I grew up eating sardine sandwiches. My mum would make it and pack it in my school lunch boxes. It was simple, delicious, and I loved it then and still love it now. It is a popular Nigerian sandwich we were grateful for.
I now make it for my children to pack in their school lunch bag just like my mama used to for me. My husband also occasionally takes it for work lunch.

Sardine Sandwich Recipe
You will love this sardine sandwich recipe that makes use of few ingredients with the option of adding vegetables to make it a sardine salad sandwich.
Sardines are a great source of Omega 3 fatty acids, protein, and calcium. They contain less mercury than most other fish which makes them a healthy option. They are also delicious.
The ingredients for this are inexpensive and easily accessible.
This recipe is super easy and takes just about 10 minutes to put together.
They are perfect as school lunch sandwich, or work lunches. They are also great fingerfoods for afternoon teas or parties.
With this recipe, I use one canned sardine for 6 slices of bread. I remember when I used to be able to make 8 slices with just one can, now the sardines in a can are not as much as they used to be. Oh well!
Ingredients

Bread – Sliced bread like white bread, 50/50, wholemeal. My preference is soft white bread.
Canned Sardines – I use sardine in sunflower oil. There are different brands of this so use any good one.
Butter
Black pepper or Cayenne pepper - This is optional.
How to Make Sardine Sandwich
Open the canned sardines and add into a bowl, add in butter, and cayenne or black pepper then mix till well combined.
Place a slice of bread on a plate or cutting board and put one third of the sardine/butter mix on it then spread the mix on the bread.
Place another slice of bread on the one spread with sardine/ butter mix.
Cut the sandwich into 2 triangles. You can also cut into rectangles and cut up to 4 fingers.
Repeat the steps above till bread and sardine mix are used up. I don't cut off the crusts of the bread but you can cut off if you prefer.
Serve and eat.

How To Store
Sardine sandwiches are best when made fresh on the day however you can make them ahead. To store, put in a sandwich box, an airtight container or wrap in clingfilm, put in a Ziploc, and store in the fridge where it will last for 2 days. When ready to eat, bring out and leave for few minutes to get to room temperature or immediately serve it cold.
Tips
- Leave out the pepper, decrease or increase quantity to suit your taste.
- Substitute butter for mayonnaise to make a sardine mayonnaise sandwich.
- You can toast the bread if you want.
- Add vegetables like lettuce, and tomatoes, or any other of your favorite.
