This cucumber sandwiches recipe is super easy and takes less than 15 minutes to put together. My daughters like theirs with cream cheese but I do make them without at times and they taste great. I have detailed how to make with or without in this post so you can make according to your preference.
Cucumber Sandwiches Recipe
Cucumber sandwiches also called tea sandwiches are traditionally made with buttered white crustless bread but there are many variations where the bread is spread with cream cheese, mayonnaise, herbs, and spices. This recipe is one of the modern variants which use cream cheese but feel free to omit the cream cheese.
Cucumbers are high in water content and if not done right the sandwiches may be soggy. The butter or cream cheese spread prevents the bread from getting wet with moisture from the cucumber slices so make sure to coat the bread all the way to the edges.
This recipe is made with 8 loaves of bread and makes 16 finger sandwiches but you can double or triple the recipe to get your required serving size.

Cucumber - I use English cucumbers which is the best type to use for this recipe. I also peel the skin off for cucumber sandwich but you can leave it on if you wish as long as you wash the cucumber well.
Cream cheese - Bring out of the fridge to soften so it is easily spreadable.
Butter- Bring butter to room temperature.
Herbs- I like to add just a little bit to enhance flavour but feel free to not use any. Herbs you can use include parsley, dill, thyme.
Black pepper - Add to taste
Salt - To taste
How to make Cucumber Sandwiches
Let me show you how to make cucumber sandwiches:
Scrape the skin off the cucumber and slice thinly. Set aside.
In a bowl, add the cream cheese, butter, black pepper, salt and parsley then mix till combined.
If not using cream cheese, leave it out and double the butter.
Spread some of the cream cheese mixture over a slice of the bread then layer with some of the cucumber slices.
Place another slice of bread over the layered one then trim the crust and cut the sandwiches into fingers.
Serve and enjoy.
How to Store and How Long Do Cucumber Sandwiches last
They are best made fresh on the day however you can make them ahead and then store. You can store in the fridge for up to 24 hours. Put in an airtight container so they do not dry out in the fridge. When ready to eat, bring out a few minutes early and bring to room temperature or you can serve cold.
Serve with Earl grey, peppermint tea, green tea or any tea of your choice.

- You can use a mandoline slicer for even, thin cucumber slices.
- Adjust salt, pepper and herbs to your taste.
