This chicken in tomato sauce recipe is one we make quite often as it pairs with almost anything. It is easy, quick, delicious, and makes a great dinner.
With this recipe, you can make restaurant-quality chicken dinner in the comfort of your home.
Chicken breasts or boneless chicken thighs are pan fried and then cooked in flavorful tomato sauce.
Just like my stove top chicken breast recipe, this is made on the stove but you can bake the chicken in the oven if you prefer.
Serve Italian chicken in tomato sauce on pasta like spaghetti, tagliatelle, linguine, rigatoni, and other short pasta. It's also great on long grain rice, and brown rice. Other dishes you can serve with are listed below in the what to serve with section.
This tomato sauce chicken makes use of clean, healthy ingredients. The ingredients used are few and what you will have in your pantry cupboard.
It's inexpensive, budget-friendly, and makes a perfect dinner for families.

Chicken - You can use chicken breasts or boneless chicken thighs.
Chopped tomatoes
Onion

Cream - (Optional) I didn't use in this post as i wanted to keep it clean but i do add this once in a while and it comes out good.
You can substitute the herbs above with Italian seasoning.
How To Make Chicken In Tomato Sauce
It's an easy and quick recipe that is ready in 30 minutes. To make it, you will cook the tomato sauce and chicken. Here's how to:
Pat dry and season chicken with salt and pepper (you can add any other seasoning of choice).
Add oil to a skillet over medium heat then add in the seasoned chicken breasts or thighs.
Let it cook for 8 minutes then flip them over to cook the other side for another 8 minutes.
Remove the chicken from the skillet.
Add chopped onions and garlic into the skillet and stir till onions are transclucent. This takes about 2 minutes.
Add in the chopped tomatoes, parsley, thyme, basil, bouillon cube, salt, and chicken broth. Stir and simmer for 5 minutes.
If using cream, add it into the pan at this time.
Add the pan-seared chicken back into the skillet and let the tomato sauce simmer on low heat for 10-15 minutes.
Chicken is safe to eat when the internal temperature is atleast 165F/ 75C.
When it's cooked, take off heat and serve.
What to serve with
Some recommendations of what to serve with this delicious tomato sauce chicken are:
Pasta - Serve over pasta such as tagliatelle, linguine, spaghetti, penne, or any other pasta then sprinkle with some parmesan for a cheesy flavor.
Rice - It's perfect on white long grain rice, basmati, or brown rice.
Potatoes - Boiled potatoes, roast potatoes, air fryer potatoes are all great options.
Grains like bulghur, couscous.
Salads - simple salads like coleslaw.
Vegetables like boiled broccoli, boiled carrots, or Mediterranean roasted vegetables.
How To Store
Leave it to completely cool and store within few hours in the fridge or freezer.
To store in the fridge: Put it in an airtight container then store it in the fridge where it will keep well for up to 3 days.
Store in the freezer: Put in a freezer-safe airtight container, label with name and dates then store in the freezer where it will keep well for up to 4 months.
To reheat: You can reheat in a pan or skillet on the stove or reheat in a microwave.
If reheating in the microwave, you can reheat from frozen. Put in a microwave-safe container, use the defrost function of the microwave, and when it's thawed, microwave on high setting until it's heated through.
If reheating on the stove, defrost it first. You can thaw it overnight in the fridge. Pour in the skillet, and sprinkle of water and cook on medium heat till it's heated through.

- You can dice the chicken into bite size to make it diced chicken in tomato sauce.
- Substitute black pepper for cayenne pepper or crushed chili pepper.
- Adjust pepper to your taste. Add more if you'd like it spicier.
- You can substitute chicken broth for white wine.

- You can add vegetables like bell peppers in the sauce. Just chop it and add at the same time with the tomatoes.

- 4 cloves Garlic minced
- 1 teaspoon Black pepper or to taste
