    What is Sorrel

Sorrel is the dried leaves of the hibiscus plant flower. It is popular in West Africa and Carribean countries. Known as zobo in Nigeria, sorrel in Jamaica and flor de jamaica in Latin America. Jamaican sorrel leaves is different to the green herb also called sorrel. Sorrel (hibiscus petals) or zobo is dark red in colour and when boiled in hot water has a tart and tangy taste. Sorrel leaves is boiled in hot water with other ingredients like ginger, cloves and oranges to make a refreshing drink. In Jamaica, for christmas and the holidays, rum and sugar syrup are added to make it festive. In Nigeria, pineapple is added to sorrel drink.

You can get sorrel (dried hibiscus) leaves from international shops like Afro carribean cash and carry, some Asian stores, African and Caribbean stores and online stores like amazon and ebay sell dried hibiscus leaves.

    Sorrel drink recipe

The instant pot pressure cooker sorrel drink is the easiest way i've ever made sorrel juice. It's quick, easy and convenient. With the instant pot, it locks in the flavour from the hibiscus leaves and draws out the juice more than to just seep in hot water or make stovetop and it only takes 8 minutes pressure cooking time. Also with instant pot pressure cooker sorrel drink, you use less sorrel leaves and get more flavour.

I made this in my instant pot duo 6 quart however you can make it in any electric pressure cooker. Don't have instant pot? Don't you worry ! I have included recipe for stovetop method as well.

Yes, you can substitute with other fruits of your choice or just leave out the orange.
