Steak marinade- ¼ cup soy sauce, ¼ cup Worcestershire sauce, ¼ cup olive oil, 2 tablespoon lemon juice, 1 tablespoon Italian seasoning, 1 teaspoon onion granules, 3 cloves garlic minced, salt, and pepper. Add steaks and marinade in a Ziploc or bowl making sure steaks are well covered in marinade and marinate in the fridge for at least 30 minutes.
Choose quality steak. Use steaks that are at least 1 inch thick. The thicker, the better.
Let the steaks marinate for at least 30 minutes if you have the time.
After bringing out the Steak from the fridge, let it come to room temperature before cooking.
Use a heavy-based pan like a cast iron skillet as they retain heat well and are good for pan frying.
Don't overcrowd the skillet or pan. If panfrying, do 1-2 at a time. Overcrowding will drop the temperature in the pan and also make it hard to easily flip the steaks.
Don't move the Steak in the first minute of pan searing so they have a nice sear.
Don't overcook.
To make pan sauce, add beef broth to the pan and deglaze it by scrapping up the brown bits. Add cornflour slurry to thicken for Gravy.
Let steak rest for at least 5 minutes before cutting into it.
