Cut the vegetables into similar sizes. I like to cut them into bite-size but not too small as they shrink a bit when cooked.
Add the cut vegetables into a mixing bowl then add olive oil and the seasoning (paprika, garlic powder, onion granules, black pepper, parsley, rosemary, and salt).
Mix till the vegetables are evenly coated in the seasoning.
Arrange the seasoned vegetables on a baking pan in a single layer without overcrowding the pan.
Put the baking pan in the middle rack of the oven and bake vegetables at a temperature of 200C/400F for 20-30 minutes or until they are tender and slightly crispy. Stir halfway through baking.
Bring out the vegetables and serve.
