This onion mashed potatoes recipe is an easy, one-pot sides that is velvety smooth, flavorful, smells, and tastes amazing. It is cooked in under 20 minutes and you have mashed potatoes with onions that you can serve with your favorite dishes. Nothing beats the savory flavor of onions paired with creamy, savory spuds. Peel the potatoes. Cut them into chunks of about 1-2 inches and rinse them under cold water.
Chop the onion into small pieces.
Add the washed potatoes and chopped onions to a large pot. Cover with enough water so that all the potatoes and onions are submerged by at least 1 inch then add salt.
Boil until the vegetables are soft. Use a fork to check the doneness.
Drain the potatoes and onions.Immediately add butter, milk, onion granules, and black pepper to the potatoes.
Mash till smooth using a potato masher, mixer, or fork.Serve hot as a side dish or even on their own.

The key to good mashed potatoes is using potatoes like russet potatoes, Maris piper, King Edwards, or other floury potatoes and cooking them long enough. This will prevent any hard bits and ensure you end up with a silky, velvety texture.
Make sure you peel them diligently to avoid any bits of skin. This makes the texture super silky!
Full-fat milk is thicker and will make the potatoes more creamy. However, you can use skimmed milk if that’s what you prefer or have available.
Salt is important in this recipe, so don’t skimp out! Make sure you add it to the water before boiling the potatoes and onions.
You can garnish with some green onions, caramelized onion, or sauteed onions for more onion flavor.
