These air fryer carrots and potatoes are tender on the inside, and crispy on the outer. It is packed full of flavor, easy to cook, and ready in 20 minutes. Roasted potatoes and carrots are my favorite side dish to chicken, turkey, steak, lamb, and fish.
Prepare the vegetables- The first step is to wash the carrots and potatoes thoroughly and pat dry them with a kitchen towel. Next, peel off the skin from the veggies. However, this step is optional as you can also cook both the veggies with the skin on.
Dice the potatoes and carrots into even-sized cubes.
Add the potatoes and carrots into a bowl then add the paprika, garlic, onion, black pepper, parsley, salt, and oil. Mix well to make sure all the chunks are evenly coated.
Transfer the seasoned carrots and potatoes to the air fryer basket. Set the temperature of the air fryer to 200C/400F and cook the veggies for 20 minutes. Remember to give them a toss halfway through the cooking time for an even crisp.

Cut the veggies into equal sizes so they cook evenly.
Don't overcrowd the basket: I always tell this to my readers, and I couldn't emphasize it more. Overcrowding the basket can cause poor air circulation, resulting in uneven cooking and no crisp. If need be, cook in batches.
Experiment with other herbs: You can add other herbs like thyme and Oregano.
