Scrape the skin off the cucumber and slice thinly. Set aside.
In a bowl, add the cream cheese, butter or mayonnaise, black pepper, salt and parsley then mix till combined.
Spread some of the cream cheese mixture over a slice of the bread then layer with some of the cucumber slices.If not using cream cheese, leave it outand double the butter.
Place another slice of bread over the layered one then trim the crust and cut the sandwiches into fingers.Serve and enjoy

You can use a mandoline slicer for even, thin cucumber slices.
Adjust salt, pepper and herbs to your taste.
You can add mayonnaise to the spread if you'd like.
