Ingredients

Instructions
Add washed black eyed peas in a pot, add water and salt. Cook till soft. This takes about 40 minutes on stovetop
In a seperate pot add vegetable oil then garlic. Sautee for 2 minutes before adding curry powder and thyme.
Add coconut milk, seasoning cube and stir then add the cooked black eyed beans.
Add mixed peppers, scotch bonnet, spring onions, salt and black pepper. Cover and leave to cook for 5-10 miutes.
Add chopped Coriander, stir and take off heat
