Instructions
Use a potato peeler to peel the sweet potatoes. Cut the potatoes into bite-sized cubes. You can also slice the potatoes. I highly recommend peeling the sweet potatoes for this recipe however if you don't want to peel the potatoes, make sure you wash them well before cutting.
Rinse the potatoes, add them into a bowl, and pat dry with paper towels.
Add salt and any seasoning of your choice to the potatoes and mix well.
Place a skillet on the stove, add oil to it, and heat on medium heat.
When the oil is heated, add the sweet potatoes and fry, turning the potatoes at intervals to fry all sides till they're crispy and tender inside.
Add black pepper.
Take off the heat and serve.
Notes
Cut the sweet potatoes into similar bite sizes so they cook evenly.
Don't overcrowd the frying pan. If it does not fit the potatoes in one go, you can cook them in batches.
How long to pan fry sweet potato is 8-12 minutes.Sweet potatoes are fried when they are tender inside, and the outer is crisp. Test doneness by inserting a fork into a piece, if the fork goes through without resistance, then it's tender.I advise cutting them into bite-sized cubes or cutting them into slices (rounds) so they fry easily and evenly without taking up too much space in the pan.
