Peel the potatoes, dice them into 1 inch cubes, rinse and pat dry with paper towels.
Dice the bell pepper and onion into similar size cubes.
Add the potatoes, bell peppers, and onions into a bowl then add garlic powder, smoked paprika, parsley, rosemary, black pepper, salt, and oil. Mix till all are well combined.
Transfer the seasoned potatoes and peppers to the air fryer basket. Don't crowd the air fryer basket.
