Instructions
INSTANT POT CHICKEN BREAST FROM FRESH
Make the dry spice rub by mixing paprika, onion powder, parsley, tarragon, coriander, garlic powder, stock cube, black pepper and salt together.
Prep, clean and pat chicken dry with kitchen towel. Add spice rub to the chicken making sure all parts are covered. If you have the time, leeave chicken to marinate for 30 minutesor more.
Set instant pot to saute function then add oil. When oil is heated, add in chicken breasts and brown the sides then turn and brown the other side.
When oil is heated, add in chicken breasts and sear the side for about 2 minutes without moving it then turn and sear the other side for another 2 minutes.
When the sides are browned, take the breasts out of the Instant pot and put them in a plate. Switch off IP saute mode.
Add water or chicken broth to the instant pot, deglaze and place trivet in the pot. Arrange chicken breasts on trivet then close the Instant pot with it’s lid.
Set to manual pressure cook 7 minutes. After the 7 minutes, do 8 minutes natural pressure release.For thin fillet of chicken breast, pressure cook for 5 minutes instead of 7 minutes.
Once the instant pot is depressurised, open the lid and take out chicken breasts.
Serve and enjoy.
INSTANT POT CHICKEN BREAST FROM FROZEN
Seperate the chicken and season with dry spice rub.
Add water or chicken broth to the instant pot and place trivet in the pot. Arrange chicken breasts on trivet then close the Instant pot with it’s lid.
Set to manual pressure cook 12 minutes. After the 12 minutes, do 8 minutes natural pressure release.
Once the instant pot is depressurised, open the lid and take out chicken breasts.
Set instant pot to saute function then add oil. When oil is heated, add in chicken breasts and brown the side for 2 minutes without moving then turn and brown the other side for another 2 minutes.
Take out of the instant pot, serve and enjoy.
HOW TO MAKE GRAVY FROM INSTANT POT CHICKEN BREAST DRIPPINGS
After removing cooked chicken breasts from the instant pot, set instant pot to saute mode.
Pour cornflour slurry in content of the pot. Stir till gravy thickens then take off heat.
Pour in gravy boat to serve.
