My vanilla sponge cake recipe never fails! This is a simple and easy cake recipe for light, fluffy, moist, and delicious vanilla cake.

Easy Vanilla Sponge Cake Recipe
This is my easy vanilla sponge cake recipe made with a few ingredients. Vanilla cake is perfect as tea or celebration cake from birthdays to graduations and more. Once you try it, you won't go back. It's the best!
The cake has pillowy soft crumbs, bursting with vanilla flavors and an amazing taste. It is moist and has the right amount of sweetness.
Tools Required
Cake pans - Two 6" round cake pans or one 8" round cake pan.
Parchment paper - To line the cake pans
Electric mixer
Mixing bowl
Cooling rack- For cooling the cakes
Skewer or cake tester
Spatula
Oven gloves
Ingredients

Butter
Sugar - Granulated sugar
Eggs - Room temperature
Vanilla extract
Self raising flour
Baking powder
How To Make Vanilla Sponge Cake
1) Add baking powder to the flour and mix. Set aside.
2) Prepare the cake tins (two 6 inch round cake pans or one 8 inch round cake pan) and set aside.
3) Preheat the oven to 160C/350F
4) Add butter and sugar to a mixing bowl and use an electric mixer to cream till it's pale and fluffy (this takes about 15 minutes).

5) Pour in the eggs and vanilla extract and mix till combined.

6) Sift in the flour and gently mix till well combined.
7) Divide the cake batter into the cake pans and bake for 40 minutes or until when a skewer inserted comes out dry.

8) Let the cakes cool in the pan for 5 minutes before turning them onto a cake rack to continue cooling.

Helpful Tips
- Use a mixing bowl deep enough to prevent splatter while mixing the cake batter.
- Bake cake on the middle rack of the oven for even heat distribution.
- Don’t open the oven door during the first 30 minutes of baking the cake to avoid cool air deflating the cake.
