    Simple chicken marinade that will give you the most delicious chicken ever. This quick and easy chicken marinade recipe is made with few simple ingredients and you can use it not just on chicken or turkey, but other meats as well. This is the best chicken marinade and can be made with fresh or dried ingredients.

    Say bye to bland, dry, unseasoned chicken. With this marinade on your chicken, you are sure of moist, juicy and super tasty chicken or turkey. This marinade is one of my favourites and it has never failed me. I use it on whole chicken, sunday roast chicken, chicken breasts, thanksgiving turkey, christmas turkey, lamb, other meats and much more. It's very versatile and just so good. I rarely brine my chicken or turkey because with this marinade, it doesn't matter ! I get flavourful, tender, and moist chicken all the time.

    This marinade takes just few minutes to put together and you make it when needed or can make it ahead. You also don't have to worry about running to the store for fresh ingredients as you can substitute with dry ingredients you would normally have in your kitchen cabinet. I have included ingredients and measurements for fresh and dried ingredients.

    Chicken marinade

    Marinade is a mixture of spices, herbs, oil and acidic liquid like vinegar, lime or lemon juice that is poured over meat to tenderise and enhance flavour. A good marinade is the secret formula for aromatic, moist, juicy, tasty meals.
    Marinating chicken is when you pour or soak chicken in marinade. By marinating, you add extra moisture into the meat and thus can prevent dryness during baking or grilling.

    Smells amazing and the aroma from the chicken during cooking is superb.

    It's easy and quick to make.

    Few ingredients, bold flavour.

    Can be made ahead in advance.

    Ingredients for chicken marinade

    For this recipe, you can use fresh ingredients or dry ingredients (Full ingredient list and recipe in recipe card at the end of the post). The ingredients you'll need are:

    Onion

    Garlic

    Coriander

    Parsley

    Tarragon

    Lemon juice

    Lemon zest

    Ginger

    Rosemary

    Stock cube

    Olive Oil

    Salt

    Paprika - This is for colour and it is optional.

    How to make simple chicken marinade

    This is super easy and takes less than 10 minutes to make. Let me show you how:

    1) The first step is to get the ingredients out and measure. Then prep and clean.

    2) Next step is to put all ingredients in food processor or blender.

    3) Process or blend to form the marinade.

    4) Scoop out of the food processor into a clean container or freezer bag.

    5) Use immediately or store for future use.

    How long to marinate chicken

    Once marinated, the chicken is ready to grill, bake or cook however it's best to let marinate for some time. Depending on the size and part of the chicken, between 1 - 48 hours is ideal. Whole chicken can be marinated for up to 48 hours.

    Tips for chicken marinade

    Don't make it too salty.

    Marinade should not be too acidic. Too much acidity can toughen or dry out the chicken.

    If you don't have food processor or blender, you can finely chop the fresh ingredients by hand before adding in the liquid.

    How to store chicken marinade

    In the fridge -  Store simple chicken marinade in the fridge for up to 3 days.

    In the freezer - Store in the freezer for up to 3 months. Put in freezer safe container or freezer bag, label with name and dates brfore storing in the freezer.

    To use  - Best to bring out of the  fridge or freezer and leave to thaw completely before use.

    Marinated chicken - Keep marinated chicken in the fridge to keep it at a safe temperature. Can be stored in the fridge for 48 hours.

    Freeze marinate chicken for up to 3 months.

    Ingredients

    • 1 large Onion
    • 5 cloves Garlic
    • 1 thumbsize Fresh Ginger or 1 tablespoon ground
    • 1 cup Fresh Coriander or 2 tablespoon dried
    • 1 cup Fresh Parsley or 2 tablesppon dried
    • 1 tablespoon Tarragon
    • 3 tablespoon Lemon juice
    • 1 tablespoon Lemon zest
    • 1 sprig Rosemary or ½ teaspoon dried
    • 1 Bouillion / Stock cube
    • ¼ cup Olive oil
    • Salt
    • 1 tablespoon Paprika (for colour) optional

    • Process or blend the ingredients to form marinade.
    • Scoop out of the food processor into a clean container or freezer bag.
