This easy homemade sausage rolls recipe is the best ever! Buttery pastry filled with flavorful sausage makes this a perfect appetizer, for entertaining, as a snack or even a meal. Sausage rolls remain one of our favorite pastries. It's just so tasty and easy to make. My husband and the children love when I make it. They all just love eating mum's super homemade sausage rolls. We have it as a main meal or snack. Usually, when it's fresh from the oven, it's the main meal then leftovers for snacking the following day. It usually doesn't last more than 24 hours in my house..we gobble it all up!
I make the shortcrust pastry from scratch just how I love it and believe me it is not hard to make. It takes less than 5 minutes to make your own pastry but if you'd rather use store-bought puff pastry, that's just fine.
This recipe is so easy to make and the only work is rolling the pastry to fill with sausage. We don't eat pork so I use chicken or beef sausages but you can go ahead and use pork sausage.
WHY THIS IS THE BEST HOMEMADE SAUSAGE ROLLS
There are different types of sausage rolls i.e how they are made, we have British sausage rolls, Scottish sausage rolls amongst others mostly made with puff pastry. This is probably not your typical puff pastry sausage rolls but this is how I make mine and it's one of the most delicious, easiest sausage rolls recipes you will find around. Let me just hint you why it's the best sausage rolls recipe:

SAUSAGE ROLLS RECIPE
I like to make my shortcrust from scratch but use store-bought sausages that I re-season.
Like I mentioned earlier, I don't eat pork so I use either chicken or beef sausages but you can use pork sausages for this recipe, it will work just fine. So let's get to it.
First, you'll need the below tools.
TOOLS YOU WILL NEED
Mixing bowl
Rolling pin
Pastry brush
Pizza cutter
Oven tray
Parchment paper
INGREDIENTS
You need less than 10 ingredients for both the pastry and the sausage rolls. Detailed ingredient list, directions, and video in the printable recipe card at the bottom of this post.
Flour
Butter
Nutmeg - Optional
Salt
Egg
Water
Sausages - I use chicken or beef sausage as I do not eat pork but you can use pork or any other type of sausage.
Black pepper
Seasoning cube
CAN I USE PLAIN FLOUR FOR THIS RECIPE
Yes, you can but you will need to add baking powder. Add a teaspoon of baking powder to every 125g plain flour.
HOW TO MAKE PASTRY FOR SAUSAGE ROLLS
Now let's talk about this pastry. This pastry is not puff pastry but you can use store bought puff pastry. This is shortcrust and how I like my sausage rolls crust. It is buttery and crumbly and takes less than 5 minutes to make no lies! Here is how:
1) Add flour, salt, nutmeg in a mixing bowl. Mix well.
2) Add in butter and mix till you get crumb-like texture then add egg yolk and water. Mix together.
You only just need to mix enough to get the ingredients together. Don't overwork the dough.
3) Mold into 2 balls, put in the bowl, cover with cling film and put in the fridge to rest for 30 minutes.
The pastry will feel soft to touch don't be tempted to add more flour.
4) Now you have the pastry or your store-bought or homemade puff pastry, let's get to how to make sausage rolls.
HOW TO MAKE SAUSAGE ROLLS
1) Remove sausages from its casing and add in a bowl. Add black pepper and seasoning, mix well then set aside.
Be careful not to make the sausages salty. Most of the sausages are pre-seasoned and you can skip this step but I like to add black pepper and seasoning cube to mine.
2) Bring out the pastry from the fridge. Cut out a section from it.
3) Put on a lightly floured surface then roll out the dough with a rolling pin to about ¼ of an inch thin. Trim dough into rectangular shape.
4) Put seasoned sausage meat in a straight line along the edge of the rectangle pastry. Roll the pastry and before getting to the edge, add egg white to the edges to seal (See visuals in videos below)
5) Cut the rolled pastry into equal or different sizes depending on how big or small you want it and place on a parchment lined tray.
6) Use a pizza cutter to makes slashes on the sausage rolls then brush with egg white for a shiny finish.
Repeat till you use up the pastry and sausage.
7) Bake in preheated oven at 160C for 25 minutes or till sausage rolls are done.
8) Bring out of the oven, serve, and enjoy.

HOW TO STORE
To store, put in the freezer or ziplock bags, and put in the fridge where it will last for up to 3 days. Sausage rolls freeze well and can be stored in the freezer for up to 3 months.
