Cajun Chicken and Rice Recipe
I like making one pan dinner and this one pot cajun chicken and rice is a family favorite. We rarely have leftovers as my children ensure they clean their plates to the last grain.
Easy and quick recipes are my forte, and not only is this one pan rice and chicken recipe easy and quick, but it also requires minimal clean-up. One pot equals fewer dishes to wash.
This Cajun chicken thighs and rice is so flavorful, and the aroma will have your tummy rumbling. The chicken is tender and juicy, and the rice is rich and flavorful. Simply delicious! This is one recipe that you will be making often.
As delicious as this cajun rice and chicken dish is, it only uses a few simple ingredients that are budget-friendly.
Use homemade cajun seasoning or a good quality storebought for convenience. I like to use my homemade cajun seasoning.
Long rain rice works best for this recipe. I have used golden sella basmati rice for this post however I do use easy cook long grain rice on most occasions.

Ingredients
Here is what you will need to make rice and chicken :
Chicken- I used bone-in skin on chicken thighs. This can be substituted for chicken legs or drumsticks.
Rice- Golden sella basmati rice or easy cook long grain rice.
Cajun Seasoning- I use my homemade cajun seasoning. You can use my recipe to make yours or use any good cajun seasoning.
Dried parsley - Optional
Onion- Brown or yellow onion.
Bell pepper- I used red bell pepper but you can use a combination of red, green, and yellow bell peppers.
Butter
Olive oil- Substitute for sunflower or vegetable oil.
Chicken stock
Salt
Fresh Parsley - For garnish

How To Make Cajun Chicken and Rice
Step 1 - Mix the cajun seasoning, dried parsley and salt.
Step 2- Clean and pat the chicken thighs dry then season with half of the cajun seasoning mix.

For Step 3- Place a pot on medium heat and add olive oil into it. When the oil is heated, arrange the chicken thighs skin side down into the pot. Brown the chicken for 3 minutes before flipping them to brown the other side.
Note: If all the chicken don't fit into the pot at once, you can do them in batches.

Step 4 - Once the chicken thighs are browned on both sides, transfer them to a plate and set aside.
Step 5- Add chopped onions to the same pot used to brown the chicken and stir the onions with the brown bits in the pot.
a Step 6- Add bell pepper, the remaining half of the cajun seasoning mix, and butter.
Stir till the butter is melted then add the washed rice.

Step 7- Add chicken stock, salt, stir, and arrange the browned chicken thighs on the rice.

Step 8- Cover the pot and let the rice cook on low heat for 25 minutes or till cooked.
b Step 9- Take the lid off the pot, transfer the chicken thighs back to a plate, add fresh parsley to the rice, and stir to combine.

Step 10- Transfer the chicken thighs back to the pot.
Take the pot off the heat. Serve and enjoy Cajun chicken and rice.

How To Store
Let it cool completely, then transfer it into an airtight container before storing it in the fridge for up to 3 days or in the freezer for up to 3 months. If storing in the freezer, use a freezer-safe container.
Chicken and rice can be reheated on the stovetop, in the oven, or the microwave.
To reheat it on the stove, transfer the rice and chicken into a pan, add a bit of water, cover the pot, and let the rice steam on low heat until the water is dried up and the rice and chicken are heated.
Tips For Making One Pot Cajun Rice and Chicken
- Was the rice till the water runs clear for a grainy and less starchy rice.
- If the cajun seasoning is not spicy enough for you, add cayenne or black pepper to it.
- The parsley garnish is optional. It can be substituted with spring onions or don't use any garnish if you prefer.

- 6 Chicken thighs

- 3 tablespoons Cajun seasoning
