This instant pot chili also called instant pot chili con carne recipe is easy, meaty, packed full of flavour and heartwarming. This classic chilli made in the instant pot is melt in the mouth delicious, cooked to perfection and makes for great meal eaten on it's own or paired with sides. Let me show you how i make the best pressure cooker chili.
Chili is not just for cold winter days, we eat it all year round in my household. My whole family enjoys it and we don't ever get enough. Before instant pot, i used to cook it on stovetop (check out my stovetop chilli con carne recipe) then i tried it in the instant pot, gamechanger! Honestly, the only way i'll be cooking chili on stovetop again is if i do not have access to my instant pot or pressure cooker goes extinct (which i doubt will happen) because let's face it, cooking chili in the pressure cooker beats stovetop method.
WHY INSTANT POT CHILI

It's quick. This recipe cooks in under an hour therefore saves time than slow cooker or stovetop method.
One pot recipe so few utensils to clean after cooking.
Nutrients and flavours are locked in the pot as chili cooks.

I don't have to keep checking the pot if it's done, once i set the instant pot to pressure cook i can then go and do other things while the IP does it's thing and alerts me when it's done.
So easy to cook that i can cook it as often as i like.
INSTANT POT CHILI RECIPE
This is instant pot chili as i know it cooked with beef mince, kidney beans, tomatoes, spices and more! chili con carne means chili with meat. It's a spicy stew but you can adjust the quantity of chilli to suit preference. There are variations in recipes and it's believed chili originated in southern Texas (Texan chili ). There's been debates on how chili should be cooked, some do not include beans nor tomatoes. Without the beans, chili looks like the popular UK bolognese and they are quite similar in mode of cooking.
This is one of the easiest chili recipe and it's based on using the 6 quart instant pot but you can make this in the 8 quart or any other brand of pressure cooker like the pressure king pro and ninja foodie.

INGREDIENTS
Beef mince - Also known as ground beef. For homemade beef mince, check out my post on how to make minced meat. I use lean beef mince for this recipe.
Chopped tomatoes
Bell pepper
Onion
Garlic
Tomato puree
Cumin
Ground Coriander
Oregano
Black pepper
Brown Sugar
Soy sauce
Chilli powder
Oil
Stock cubes
Bay leaf (optional)
Broth
Kidney beans - If you'd like to make homemade kidney beans check my recipe for Instant pot kidney beans. If using canned beans, drain and rinse.
TO GARNISH (OPTIONAL)
Spring Onions
Coriander

HOW TO MAKE CHILI IN INSTANT POT
Step 1 : Get all the ingredients ready.
2) Put on the instant pot and set to saute. Add oil in the pot then add in onions, garlic and beef mince (ground beef).
Brown the meat for about 3 - 4 minutes.
3) Add in chilli, oregano, brown sugar, coriander, cumin and beef broth.
4) Next step is to Deglaze the pot by scraping any brown bits off the bottom. This part is important so you don't get the burn error which can happen if brown bits are stuck to the bottom of the pot.
5) After deglazing the pot, add in chopped tomatoes, bell peppers, kidney beans and tomato puree on top. Do not stir.
6) Cover the instant pot with it's lid and turn the vent into sealing. Set instant pot to manual pressure cook high 25 minutes. After pressure cooking, do 20 minutes natural pressure release.
7) When the pressure cooker is depressurised and safe to open, take off the lid and stir.
8) Switch on saute mode of the instant pot and stir chili until it thickens to how you desire. Note that chili will continue to thicken with retained heat.
Serve chili and enjoy the tastiest, melt in the mouth, best instant pot chili.

FREQUENTLY ASKED QUESTIONS ABOUT CHILI
HOW LONG TO COOK CHILI IN INSTANT POT
With this recipe, it takes 25 minutes of pressure cooking and 20 minutes of natural pressure release. Note that it takes about 10 minutes for instant pot to build pressure. So that's about 50 minutes total time for the most delicious chilli. Trust me, it's so worth the time!
IS CHILI SAME AS CHILLI CON CARNE OR CHILLI
Chilli con carne means chili with meat. It’s also usually just called chili. In UK, we refer to it as chilli con carne while US simply call it chili. Recipe varies from country to country with debate on if chili should include beans or tomatoes.
HOW DO YOU THICKEN CHILI INSTANT POT
If you need to thicken, just use the saute mode of the IP to cook for few minutes and chili start to thicken. Also when cooked, as it sits chili thickens.
CAN I MAKE CHILI WITHOUT BEANS
Absolutely. If you prefer not to use beans just omit that in the ingredients and follow the recipe without including beans. You will still get delicious chili. That's one of the beauty of homemade meals, ability to adapt to suitability. You can also adjust the amount of chilli powder to suit spice tolerance and preference.
HOW TO STORE
Chili tastes better the next day! To store leftover chili, put in airtight container or freezer bags, label and store in the fridge for up to 4 days or in the freezer for up to 6 months.
