Instant Pot Baked Potatoes Recipe
This Baked potatoes recipe was tested in instant pot duo 7 in 1 6 quart but you can use any other electric pressure cooker like ninja foodie, pressure king pro and others. Although i used 3 potatoes in this post, the instant pot 6 quart fits up to 5 large potatoes at a time and more for smaller sized ones.
I tested this recipe with small, medium and large potatoes and i have included details and guide to cooking time for the various sizes.
Finished off in the oven for crispy skin, topped with salt, pepper and butter with option of other recommended sides, baked potatoes in instant pot has never been easier and tastier.

What potatoes are best for baked potatoes
Generally potatoes with high starch and low water content are best for baking. In UK, there are ones specifically labelled baking potatoes which makes for good choice. Others good for baking are:
Russet potatoes (Idaho)
King Edwards
Yukon gold
Desiree
Mary piper
How to make baked potatoes in instant pot
First scrub and wash the potatoes under running water to get rid of dirt. You can do this by making use of brush or soft sponge.
Poke the potatoes with fork making about 5 punctures in each potato.
Next add a cup of water in the inner pot of the instant pot then place trivet in the pot.
Arrange the washed potatoes on the trivet.
Close the instant pot pressure cooker with it's lid and turn the valve into sealing position.
Set IP to manual pressure cook on high and afterwards do a natural release.
When the pot is depressurised, open the lid.
For crispy skin, arrange the potatoes on oven tray, brush with olive oil and bake in the oven at 200C for about 5 minutes.
Bring potatoes out, cut, sprinkle with salt, pepper, butter and any toppings of choice.
How long to pressure cook baked potatoes in instant pot?
Small (6-8 ounce - 220g): 14 minutes msanual high pressure cook.
Medium (8-10 ounces - 280g): 16 minutes manual high pressure cook.
Large (10- 12 ounces - 340g): 20 minutes manual high pressure cook.

How to store and use leftover
To store, quick cool, put in plastic container and store in the fridge for up to 3 days. Do not store in the fridge with aluminium foil to prevent botulinum bacteria from growing on it.
Leftover baked potatoes can be used in soups and stews, in salads like potato salad, curries.

- Use similar size potatoes so they cook in same time.
- Use trivet or steamer basket. Don't cook potato directly in water to avoid mushy potatoes.
- Pierce potatoes with fork to avoid it exploding in the pot while cooking.
- Don't overcrowd the instant pot.
