    This roasted potatoes with rosemary and garlic uses a few ingredients yet the flavors are amazing. Only 6 ingredients, and you have a tasty potato dish worthy of any occasion. It's simply delicious.

    If you are looking for a potato recipe for occasions like Easter, Thanksgiving, Christmas, or special occasions, this is the one. It will be the star of the table. However, you don't have to wait for special occasions to whip up this classic potato dish.

    Rosemary pairs well with potatoes. It gives it a nice aroma and a unique taste. If I were to choose just one herb for roast potatoes, it would be rosemary. That's how good it is with potatoes.

    This recipe is customizable and you can adjust the quantity of the garlic and rosemary to suit your taste. You can also add 1 or 2 more of your favorite herbs to it. Examples of some herbs I occasionally add are Parsley and thyme. The pepper also can be adjusted to your taste.

    With this my recipe, you get potatoes that have crispy edges and fluffy inside, no burnt garlic or burnt herbs taste. The secret is to use dried garlic and rosemary with some fresh rosemary. 

    This roasted rosemary and garlic potatoes is family-friendly, and budget-friendly.

    What You Will Need

    Here are the ingredients you will need to make rosemary garlic roast potatoes:

    Potatoes- I like to use Maris piper potatoes or baking potatoes. You can use any good potatoes for this recipe.

    Garlic granules or garlic powder

    Dried rosemary

    Fresh rosemary

    Paprika- I like to add a bit of paprika for color. You can leave this out if you prefer.

    Black pepper - This can be substituted for cayenne pepper.

    Salt

    Olive oil

    How To Make Roasted Potatoes With Rosemary and Garlic

    Peel the potatoes, and cut into about 1- 2 inch sizes.

    Rinse the potatoes, drain them, and pat them dry with paper towels.

    Add garlic powder, dried rosemary, black pepper, paprika, salt, and olive oil. Mix till they are all well combined.

    Transfer the seasoned potatoes to a baking tray and garnish with fresh rosemary.

    Bake potatoes in the oven at 200C/400F for 45-50 minutes. Turn them once or twice during cooking to ensure they brown evenly.

    Once cooked, they will be fluffy inside and crispy on the outer.

    Rosemary potatoes make a delicious side dish and can be served with meat, sauces, and eggs. Here are some suggestions of what to serve it with :

    How To Store

    Let the potatoes cool completely then pack them in an airtight container before storing them in the fridge for up to 4 days or in the freezer for up to 3 months.
    Reheat it in the oven at 170C for 10 minutes or until heated for a crispy outer and fluffy inside. They can be reheated in the microwave but won't be as crispy. Aside from the oven, using an air fryer is another good way to reheat roast potatoes.

    Tips For Making Roasted Potatoes With Garlic and Rosemary

    • Don't peel the potatoes if you prefer to have the skin on them. However, wash them well so there is no dirt on them.
    • You can line the baking tray with parchment paper for easy clean up of the tray.
    • Don't overcrowd the baking tray so the potatoes have room to roast and get crispy.
    • The bigger the potatoes are cut the longer it takes to cook. 1-2 inch size works fine.
