My love for chicken legs quarters in it's full glory (bone in, skin on) is on another level. I personally think this is the best part of chicken after chicken wings ofcourse. Like, it's both thigh and drumstick in one so apart from enjoying the size of 2 in 1 which means you get more meat, it's also convenient and cheap and full of flavour consistent with dark meat.
I am not the only one in my family who loves chicken. My children and husband share this love with me. When it comes to baked chicken, we don't ever get enough.

As usual with my recipes, i have put step by step pictures of the process but this baked chicken legs recipe is so simple it's almost not necessary.

The ingredients for this recipe are:
Chicken Legs
Dried thyme
Oregano
Black pepper
Parsley
Olive oil
Curry powder
DIRECTIONS
Pat chicken legs dry with kitchen towel to remove excess moisture and put in a bowl.
Add in all the other ingredients.
Mix well making sure the rub gets into all parts. Leave to sit for 5 minutes. If you have enough time you can cover the bowl with cling film and put in the fridge for the chicken to marinate for longer.
Place baking sheet /parchment paper on a baking tray and arrange the marinated chicken legs on it.
Put the chicken tray in the oven and bake till golden brown.
How long to bake chicken legs
When it comes to poultry, it is key to get the temperature and timing right.
For food safety, internal temperature must reach 165F or 75C.
You can ensure this by using meat thermometer. Insert the meat thermometer into the chicken in such a way it sits along the bone for the most accurate temperature. If using boneless chicken, internal temperature should still be 165F or 75C.
How long to cook chicken legs in oven at 180?
Bake chicken legs at 180 Celcius for 40- 45 minutes.
How long to cook chicken legs in oven at 350?
45 - 55 minutes at 350 Fahrenheit

Buy Organic chicken
Drain the juice after 10 minutes
Turn chicken over after 20 minutes in the oven for the other side to brown .
For crispy skin, increase the temperature of the oven to 200C 3-5 minutes before taking out.
Be careful not to over bake and dry out the chicken.
